Winter relish

APPLE CINNAMON MUFFINS
You will need:
1 and 1⁄2 cups of brown sugar (or any sugar you prefer)
1 egg
1 1⁄2 teaspoons of vanilla
2 1⁄2 cups of flour
1/4 teaspoon of salt
1 teaspoon of baking soda
1 cup of butter
2 cups (or more) of slice apples PS: be careful to have thin slices
HOW DO I MAKE THEM?
In a large bowl whisk together brown sugar, oil, egg and vanilla until smooth.
In a separate bowl, sift together flour, soda and salt
Stir oil mixture into flour mixture alternately with buttermilk.
Fold in apples, mixing just until combined.
Spoon into greased muffin cups filling 3/4 full.
For the topping (optional):
You will need:
1 1/2 cups of brown sugar
1/3 cup of flour
1/4 cup of melted unsalted butter
1 teaspoon of cinnamon
HOW DO I MAKE IT?
In a bowl mix together the sugar, butter, flour and cinnamon. Whisk them until they are crumbly.
BAKING: Bake at 350°F for 25-30 minutes or until golden brown and tops spring back.
