Stuffed Eggplants
Hello! What's up? Today, we'll find a new recipe which is healthy, easy and cheap. Let's see...
WHAT DO YOU NEED?
2 eggplants (for 4 portions)
2 peppers
2 tomatoes
1 zucchini
other vegetables of your choice
200 g minced meat
First and first step is to cut the eggplant in half. Was it hard? We don't think so :)))
Next, cut fine some vertical and horizontally (cut the core of the eggplant, but be careful just to not cut it all through).
Then, in the new "grids" which have just formed, add the chopped vegetables ( the peppers, tomatoes, zucchini etc.) and the meat.
PS: the meat shall be slowly cooked before adding it.
The stuffed eggplants go to the oven for about an hour, until they are completely cooked.
PS: for a better taste, add fresh chopped tomatoes on top.
You may add grated cheese or yogurt.
